I recommend this full-bodied coffee for home-baked Kløben
There is hardly anything better than the aroma of freshly brewed coffee with a warm Kløben and butter. I can warmly recommend Puro Organic Dark Roast filter coffee – it goes perfectly with the sweet raisins and candied peel in the bread. Kind regards, Morten.
Honey cakes and Kløben as part of European Christmas traditions
Kløben is one of a long line of Christmas bakes that sit alongside other classics such as honey cakes, vanilla rings and pebernødder (Danish peppernuts). Especially in Germany and the Nordic countries, Kløben is associated with the cosy Christmas season, when baking is a firm tradition.
Christmas cakes like Kløben have a special place in European cake culture, where they are often linked to togetherness and warm moments. Gathering around a freshly baked Kløben with a cup of hot cocoa or gløgg (Danish mulled wine) highlights the Christmas message of closeness and cosiness. Kløben, with its rich flavour of raisins, candied peel and a light dusting of icing sugar, is a symbol of this shared experience of tradition and enjoyment.
Where does Kløben come from?
Kløben has its origins in Germany, where it was first mentioned in Dresden in the 15th century. This type of baked good, known as “stollen”, was originally baked as part of the Christian period of fasting before Christmas. Over time, Kløben developed into a more luxurious cake, filled with dried fruit and often enriched with butter and milk – a change made possible by a dispensation from the Church.
In South Jutland, Kløben has a central place in the Christmas traditions. This soft, sweet cake with raisins, often supplemented with candied peel and sometimes marzipan, is a classic that is baked eagerly in December. It is a much-loved delicacy, often served with butter and enjoyed with a cup of coffee or gløgg, which creates warmth and cosiness in the cold Christmas season.
How do you get the best result?
Achieving the perfect Kløben requires a focus on both ingredients and technique. Here are some tips:
- Quality of ingredients: Use Danish ingredients where possible. Choose fresh eggs, soft butter of high quality and raisins without additives.
- Proper rising: Make sure the dough has time to rise properly. A long rising time ensures a fluffy, soft Kløben.
- Even baking: Use baking paper or a tin designed for the air fryer to make sure the Kløben bakes evenly without getting too dark.
- Temperature control: Always preheat the air fryer and keep the temperature at around 170 °C. This ensures a beautiful crust and a moist interior texture.
Variations of Kløben
Kløben can be varied in many ways to suit different tastes:
- Chocolate Kløben: Replace the raisins and candied peel with chopped dark chocolate or chocolate chips for a more kid-friendly version.
- Nut Kløben: Add chopped walnuts or almonds for extra crunch and a nutty flavour.
- Spiced Kløben: Add cinnamon, extra cardamom or a little grated orange zest for a more spiced and Christmassy version.
- Vegan Kløben: Replace the butter, milk and egg with plant-based alternatives – e.g. plant-based margarine, oat milk and a little extra oat milk instead of the egg (brush with oat milk).
Decoration for Kløben
Icing sugar is the classic decoration for Kløben, but there are many other options for giving your cake a personal touch:
- Glaze: Make a simple glaze with icing sugar and lemon juice, and sprinkle with finely chopped nuts or dried cranberries if you like.
- Sugar pearls: Use coloured sugar pearls or edible gold dust for a festive and elegant look.
Try brushing the Kløben with a little melted butter straight after baking, while it is still warm. This makes the surface extra soft and adds a delicious depth to the flavour.

FAQ
The recipe makes one Kløben that fits in a standard 5-6 litre basket. It needs at least 2 cm of air all the way around and plenty of room up to the heating element once it has risen. If you want to make a double batch, bake two Kløben, one at a time.
It is golden brown and sounds hollow when you tap the bottom lightly. If you have a meat thermometer, it should read approx. 95 °C in the centre. If the top is taking on too much colour, turn it down to 160 °C for the last few minutes.
The first rise (approx. 1 hour) gives the dough air and flavour. After shaping, the Kløben needs to rise again for approx. 30 minutes, otherwise it becomes dense and may crack during baking. Only brush with egg once it has finished rising.

Ingredients
- 250 g wheat flour (keep a little back)
- 25 g sugar
- ½ tsp salt
- 1 tsp ground cardamom
- 40 g butter (softened)
- 15 g yeast (fresh)
- 1 dl milk (lukewarm, approx. 37 °C)
- 1 pcs egg (beaten – half in the dough, the rest for brushing)
- 40 g raisins
- 25 g chopped candied peel (optional)
- 1 tbsp icing sugar (for decoration)
How to make it
Prepare the dough
- Dissolve the yeast in the lukewarm milk.
- Add the sugar, salt, cardamom, half of the egg and the softened butter.
- Fold in the raisins and candied peel.
Rising
- Let the dough rise in the bowl under a clean tea towel for approx. 1 hour, until it has doubled in size.
Shape and second rise
- Roll the dough out into an oval sheet of approx. 18 × 14 cm. Press a groove lengthways, slightly off-centre, and fold the narrow part over the wide part so that the edge sits slightly inside – this is the ‘cleft’ shape. Press any raisins that stick out back into the dough. The Kløben needs at least 2 cm of space to the edge of the basket.
- Place it on a piece of baking paper, cut to size so that it does not stick up above the Kløben.
- Let the Kløben rise for a further 30 minutes or so.
- Gently brush the Kløben with the rest of the egg.
Baking in the air fryer
- Preheat the air fryer to 170 °C. (Use the preheat function, or let it run for a few minutes before cooking.)
- Bake the Kløben for 20-25 minutes, until it is golden brown and sounds hollow when you tap the bottom (approx. 95 °C in the centre). If it gets too dark, turn it down to 160 °C for the last few minutes.Start the online kitchen timer here
Cool and decorate
- Let the Kløben cool on a wire rack and dust with icing sugar before serving.
