Preheat your airfryer to 200°C (Preset it, or let it run for a couple of minutes before cooking)
In a bowl, mix 2 tbsp olive oil, crushed 2 clove garlic, 1 tsp rosemary, 1 tsp thyme, 1 tsp salt and pepper.
Rub the mixture evenly over 600 g beef topside, so it is completely covered.
Place the roast beef in the airfryer basket and cook for 20-25 minutes at 200°C, depending on your desired doneness. Start the online kitchen timer hereUse a meat thermometer to ensure the meat reaches an internal temperature of 60-65°C for medium doneness.
When the roast beef is done, let it rest for a few minutes before slicing and serving.
