Why make Wiener schnitzel in the airfryer?

Preparing Wiener schnitzel in an airfryer offers several advantages. First of all, the amount of fat is significantly reduced, since much less oil is used compared to traditional frying. This makes the dish healthier and lighter without compromising the golden, crispy texture that is so characteristic of a good schnitzel. In addition, the cooking time is often shorter, which makes this method ideal for those who want to save time in the kitchen. Using an airfryer also promotes even cooking, resulting in a consistently delicious veal schnitzel every time.

What flavour character does Wiener schnitzel have?

Wiener schnitzel is known for its unique flavour combination of delicate, pounded veal and the crunchy, golden breading. The veal is mild in flavour and becomes incredibly tender after cooking. The breading adds a rich and satisfying texture as well as a slightly nutty taste from the browned breadcrumbs. When veal schnitzel is served with accompaniments such as lemon juice, capers and anchovies, it gains a tangy and slightly salty dimension that further enhances the flavour of the meat.

What do you drink with Wiener schnitzel in the airfryer?

When I serve Wiener schnitzel in the airfryer, I am very fond of pouring a light and elegant red wine to go with it. Veal is pale and tender, and especially the classic accompaniment of lemon and capers calls for a wine that does not overpower the dish’s fine nuances. My personal recommendation for this schnitzel is a Pinot Noir ORGANIC Marlborough Misty Cove Wines 2020. With its fresh fruity notes and light character, it harmonises wonderfully with both the crispy breading and the mild piece of meat, and it lifts the meal to new heights.

Where do the dish and the name originate?

Wiener schnitzel has its roots in Austria and is one of the country’s most famous dishes. The name “Wienerschnitzel” refers directly to Vienna, the capital of Austria. Although there is some debate about the dish’s origin, the general consensus is that it was popularised in Vienna in the 19th century. Traditionally, this dish consists of a thin piece of veal that is pounded, breaded in egg, flour and breadcrumbs, and then fried to perfection. Over time, Wiener schnitzel has not only remained a cherished part of Austrian food culture but has also gained international recognition.

What do you serve with it?

A genuine Wiener schnitzel is typically served with a range of classic accompaniments that complement and enhance the dish’s flavour notes. These include anchovies, lemon, capers and freshly grated horseradish, which all add a fresh and piquant dimension to the tender and juicy meat. Crispy browned potatoes in the airfryer make an ideal side that adds a pleasant texture. A butter sauce can also accompany the dish, adding a rich and creamy component that balances the fresh and tangy elements of the accompaniments.

Let your breaded meat rest in the fridge for 10-15 minutes before cooking it in the airfryer. This helps set the breading so it stays on the meat better during cooking, and ensures that your Wiener schnitzel turns out crispy on the outside and juicy on the inside.
