Cauliflower has taken on a new role in my kitchen. Instead of ending up as a soft floret beside the roast, it gets cut into bite-sized pieces, turned in flour, egg and breadcrumbs with parmesan, and sent into the air fryer until the crust crunches. Plenty of people call the dish cauliflower nuggets, but I’m sticking with the name cauliflower popcorn — because that’s exactly how it gets eaten: a handful at a time, straight from the tray.

The whole batch is ready in 34 minutes, and only 14 of those are actual cooking at 190 °C. The rest goes on the coating, and that part you can happily do in advance. In return you get a golden, crisp surface and cauliflower that still has bite inside — without a deep fryer in sight.

Why I love cauliflower popcorn in the air fryer
Coated vegetables in the oven have one basic problem: the coating lies flat against the baking tray, soaks up moisture and turns soggy underneath while the top browns. The air fryer solves it with hot air from every side, so the breadcrumbs dry out and take on colour all the way round. At the same time you avoid pouring oil into a pan — a couple of teaspoons brushed or sprayed on is plenty.
The parmesan in the breadcrumbs is not decoration. The cheese melts into the coating and forms a thin, salty crust that binds the crumbs together, so they don’t shower off when you lift a floret. That’s the detail that decides whether you end up with a crisp coating or a pile of loose breadcrumbs in the bottom of the basket.
The difference between air fryer and oven
An oven needs markedly longer for the same job — as a rule of thumb 20-30 per cent more, because the air sits more still around the food. In the air fryer the florets are done in 14 minutes at 190 °C, because the circulating heat hits the surface constantly. The shorter time has a side benefit: the cauliflower doesn’t have time to steam itself soft inside, but keeps that slight bite which is the whole point of the popcorn format.
My kitchen test of cauliflower popcorn
I’ve run this batch in my Cosori Dual Blaze, and 190 °C for 14 minutes is exactly the point where the breadcrumbs are golden without the parmesan tipping over. Turning it higher made the cheese bitter at the edges long before the cauliflower was tender inside — and going lower left the coating pale and slightly floury in flavour.
The coating itself took me around 20 minutes for a whole cauliflower. That’s the heavy part of the job, and there is no shortcut if the crumbs are going to stay put. In return the florets can sit fully coated on a tray in the fridge until you’re ready to fire up. Along the way I turn them once halfway through the 14 minutes, so the underside doesn’t end up flat and pale.
Leave the florets in a single layer with air between them. That’s the one rule you can’t negotiate on if they’re going to turn out crisp.

The typical mistakes and how to avoid them
The mistake I see most often is an overfilled basket. If the florets lie on top of each other, they steam each other soft and the coating turns soggy instead of crisp — run two batches in a single layer rather than one batch in three layers. The next one is wet cauliflower: if the florets go straight from rinsing into the flour, the flour slides off, and the egg has nothing to bind the breadcrumbs to, so pat them thoroughly dry with a tea towel first. And then there is the size. Cut the florets too big and the coating burns long before the middle is tender, while pieces that are far too small dry out. Keep them the size of a walnut, so the 14 minutes at 190 °C work all the way through.
How to serve cauliflower popcorn
It’s at its best within the first quarter of an hour, while the crust still crunches, so get it on the table straight out of the basket. Here are the servings that most often end up on my own table:
- As a crisp topping on a green salad with lemon dressing
- With a cold garlic dip or aioli as a snack for the Friday night film
- Beside a burger or fried chicken instead of fries
- Scattered with extra grated parmesan and fresh parsley leaves
- As the vegetarian option on the tapas table alongside olives and bread
Storage and reheating
Leftovers keep for a couple of days in an airtight container in the fridge, but they soften along the way — that’s unavoidable when the coating draws moisture out of the cauliflower. You get most of the crispness back by giving them a short reunion with the air fryer at 190 °C, until they crunch again. The microwave, on the other hand, is the surest place to ruin them; it turns the coating rubbery in under a minute. If you want a head start for next time, freeze the florets raw and fully coated rather than cooked.
Cauliflower popcorn moves an everyday vegetable from duty to temptation. Get the coating right, keep the florets in a single layer, and let the air fryer do the rest. Then you’ll soon find that the tray is empty long before the rest of the food is ready.

You can, but they rarely turn out quite as crisp. Frozen cauliflower gives off a lot of water as it thaws, and the coating struggles to stay put on a wet surface. Let them thaw completely, pat them thoroughly dry, and expect a slightly softer texture inside.

Cauliflower
- 1 pcs cauliflower (Approx. 800 g)
Coating
- 100 g plain flour

- 1 tsp paprika (Sweet or smoked)

- 0.5 tsp garlic powder

- 1 tsp salt

- 0.5 tsp black pepper (Freshly ground)

- 3 pcs eggs

- 150 g breadcrumbs (Preferably panko)

- 60 g parmesan (Finely grated)

- 2 tbsp olive oil (For brushing)

How to make it
Preparation
- Cut 1 pcs cauliflower into small 3-4 cm florets so they finish cooking at the same time. Rinse the florets and pat them completely dry with a clean tea towel.
- Mix 100 g plain flour with 1 tsp paprika, 0.5 tsp garlic powder, 1 tsp salt and 0.5 tsp black pepper in a deep plate.
- Beat 3 pcs eggs together in a second deep plate. Mix 150 g breadcrumbs with 60 g parmesan in a third plate, so you have three stations ready side by side.
- Turn the florets in the flour mixture, then dip them in the egg, and finally press them firmly into the breadcrumbs and parmesan, so the coating covers the whole surface. Put them on a tray as they are ready.
Cooking in the air fryer
- Preheat the air fryer to 190 °C fan.
- Brush the coated florets lightly with 2 tbsp olive oil. The oil is what makes the coating golden brown and crisp instead of floury.
- Bake the cauliflower in a single layer in the basket with a little air between the pieces for 14 minutes at 190 °C. Shake the basket after 7 minutes so they crisp up evenly all over.
- Check that the florets are golden and crisp on the outside and tender inside. If they are still firm, give them another 2-3 minutes at 190 °C.
Serving
- Scatter 2 tbsp fresh parsley over the hot cauliflower popcorn and serve it with wedges of 1 pcs lemon to squeeze over. It should be eaten straight away, while the coating is still crisp.
Our notes for the recipe
Pat the cauliflower florets completely dry before you coat them — water on the surface makes the flour clump, so the coating falls off during cooking. Press the breadcrumbs and parmesan on firmly with your fingers, and always lay the florets in a single layer so they turn crisp instead of steaming. Variation:
Stir 1 tsp chilli flakes or curry powder into the flour mixture for more heat, or swap the parmesan for grated pecorino. For the buffalo version, toss the finished popcorn in melted butter mixed with hot sauce just before serving. Serving:
