Chilli cheese balls are the kind of snack that disappears from the platter long before it reaches the table. A crisp, golden coating on the outside and a warm, stretchy centre of melted cheese with little pieces of fresh chilli inside. On the fast food menu they are deep-fried, and that is exactly why most people give up on making them at home: it is messy, the smell hangs around the whole house, and a litre of oil is hard to justify for ten little balls.

In the air fryer all the objections fall away. You get the same crisp surface and the same molten cheese centre without a pan of boiling oil on the hob. The secret is not in the temperature — it is in the freezer.

Why I love chilli cheese balls in the air fryer

Cheese that has to melt on the inside without escaping to the outside is a balancing act. In a deep fryer you win with raw heat: the boiling oil seals the surface almost instantly, long before the cheese has time to go thin enough to run out. The air fryer works more slowly, because air conducts heat less well than oil, and so you have to win that time another way.

The solution is the freezer. An hour of hard freezing before the balls go into the basket means the centre spends the first few minutes simply thawing, while the airflow builds the crisp coating in the meantime. At 200 °C they are done in 8 minutes — the coating crackles, and the cheese has just reached the point where it gives you a proper cheese pull.

The difference between an air fryer and a deep fryer

A deep fryer surrounds the food with hot oil on all sides at once. The air fryer blows hot air around and needs space around every single ball to do its job. In practice that means only one thing: lay them out in a single layer with air in between. In return you use a couple of tablespoons of oil instead of a litre, and the kitchen does not smell of deep-frying for the rest of the evening.

My kitchen test of the chilli cheese balls

I have made this recipe a fair number of times in my Cosori Dual Blaze, and 200 °C is the point where everything adds up. At a lower temperature the coating turned pale and a little chewy, even when I gave it longer; at 200 °C the balls are golden in 8 minutes, and because the centre comes straight from the freezer, the cheese does not have time to break through the coating.

The two baskets are an advantage here, because the balls need space — I split the mixture into two batches rather than forcing everything in at once. Reckon on about 20 minutes of preparation, an hour in the freezer and 8 minutes in the basket, so just under an hour and a half in total. Most of that is waiting time, where you are not doing anything.

The freezing time is not a suggestion. It is the whole reason the cheese stays inside the ball instead of in the bottom of the basket.

The typical mistakes and how to avoid them

The mistake that costs the most balls is impatience at the freezer. If you take them out after twenty minutes because they feel cold on the outside, the centre is still soft, and the cheese finds its way out through the first crack in the coating — set a timer for an hour and do not peek. The second is a thin or uneven coating: the cheese is molten once it gets hot, and the coating is the only thing holding it in, so give the balls an extra turn in egg and crumb wherever the layer looks thin. The third is an overcrowded basket, where the balls touch each other and steam instead of crisping up. A single layer with air around every one, and two batches if that is what it takes.

How to serve the chilli cheese balls

The balls are best straight from the basket, while the cheese still pulls into long strings, so have the dips and sides ready before you start the air fryer.

  • Sweet chilli, garlic dressing or crème fraîche stirred together with lime and salt
  • A crisp coleslaw that cuts through the rich cheese
  • As part of a homemade fast food night alongside chips and burgers
  • Cold vegetable sticks if the snack needs to be a bit lighter
  • A scattering of fresh coriander leaves or finely chopped spring onions just before serving

Storage and reheating

Coated, uncooked balls can sit in the freezer for a couple of months, so the snack is ready the next time guests turn up — and you skip both the preparation and the freezing time. Cooked balls keep for a couple of days in the fridge in an airtight container, but they never come back quite as crisp. Give them a couple of minutes in the air fryer rather than the microwave, which turns the coating soft and rubbery.

Chilli cheese balls are one of those dishes where the air fryer turns something fiddly into something everyday. Coat, freeze and let the basket do the rest — and you have crisp cheese on the table without a drop of deep-frying oil.

Cheese filling

  • 200 g plain cream cheese (The firm type, not light)
     
  • 150 g cheddar (Finely grated)
     
  • 2 pcs red chillies (Finely chopped, seeds removed)
     
  • 2 tsp smoked paprika
     
  • 1 tsp garlic powder
     
  • 1 tsp salt

Coating

  • 50 g plain flour
     
  • 2 pcs eggs
     
  • 100 g panko breadcrumbs
     
  • 1 tbsp neutral oil (For brushing)
     

How to make it

Preparation

  • Beat 200 g plain cream cheese until soft in a bowl, then mix in 150 g cheddar, 2 pcs red chillies, 2 tsp smoked paprika, 1 tsp garlic powder and 1 tsp salt until the mixture is completely smooth and even.
  • Shape the mixture into 16 evenly sized balls of about 3 cm. Place them on a tray lined with parchment paper and put them in the freezer for 60 minutes, until they are frozen solid. This step is crucial for keeping the cheese inside the ball during cooking.
  • Put 50 g plain flour in one bowl, whisk 2 pcs eggs together in another, and tip 100 g panko breadcrumbs into a third.
  • Turn the frozen balls first in the flour, then in the egg and finally in the panko. Dip them once more in egg and panko so the coating covers them completely with no gaps. The double coating gives you the crisp surface and holds the cheese in.

Cooking in the air fryer

  • Preheat the air fryer to 200 °C fan.
  • Brush the balls lightly all over with 1 tbsp neutral oil, and place them in a single layer in the basket with plenty of space between them.
  • Bake them at 200 °C for 8 minutes. Turn them carefully after 5 minutes so the coating goes evenly golden all over. If they are still pale, give them 1-2 minutes more and keep an eye on them. The cheese must not break through.

Serving

  • Let them rest for 2 minutes so the melted cheese sets slightly. Serve them warm with a dip of crème fraîche, sweet chilli or garlic dressing.

Tips for a perfect result:
The balls need to be frozen solid before you coat and bake them. If they are only chilled, the cheese melts out into the basket long before the coating has a chance to crisp up.
Crisp outside, soft centre:
A double coating of egg and panko seals every gap, and a thin layer of oil makes the crumb brown just as it would in a deep fryer. Space the balls out well so the air can circulate all the way round. An overcrowded basket gives soft sides.
Variation:
Swap the cheddar for mozzarella for a longer cheese pull, or use jarred jalapeños instead of fresh chillies if you want less heat.
To serve:
Serve them as a snack with sweet chilli dip, aioli or garlic dressing. They also work as a starter alongside a fresh salad.
