Potato lasagne is the weeknight answer to what you do when the craving for lasagne strikes but the pasta sheets have run out, or you simply want to serve something filling without the heavy layers of dough. Thin potato slices step in as the layers, soak up the flavour from the meat sauce and turn tender under a golden crust of cheese, while the heat of the air fryer brings the dish together in less than half the time a regular oven would take. It’s a creamy, down-to-earth dish that tastes like Sunday dinner but is ready on an ordinary Tuesday — and the children usually go straight for seconds before they even notice there’s no pasta in it.

Why I love potato lasagne in the air fryer
Potato lasagne first hit my kitchen one Thursday evening, when I was out of pasta sheets and had half a kilo of minced beef left. The result was a small revelation: the potatoes take on the béchamel in a way pasta sheets never do, and you avoid the soft, stodgy texture a classic lasagne can develop if it rests for too long. In the air fryer the dish bakes straight from raw slices — the heat is intense enough to cook the potatoes tender while the cheese browns on top.
The difference between air fryer and oven
The traditional oven version of potato lasagne typically needs 50-60 minutes at 200 °C, because the heat has to penetrate the closed sides of a large dish. The air fryer has concentrated circulating heat in a smaller space, so the same potato layers turn tender in less than half the time. You save time, energy and the moist post-bake pressure where the cheese can turn rubbery. The only adjustment you need to make is to choose a dish that fits the basket — and to slice the potatoes exactly 2-3 mm thick.
My kitchen test of potato lasagne
I’ve tested the potato lasagne in my Cosori Dual Blaze in an oval ceramic dish that just barely fits in one basket. 180 °C for 25 minutes under foil and then 5 minutes at 200 °C without foil is the point where the potatoes are baked through, the béchamel has set, and the cheese has a golden, lightly crisp edge. If I stick a fork into the middle, it slides straight through without resistance. On the Philips XXL model, where the basket is bigger, I could make almost a double portion at once, and it handled the same times with just a couple of extra minutes at the final stage — compared with a typical oven version of 55 minutes, that’s a real time saving.
Slice the potatoes 2-3 mm thick with a mandoline. Thicker slices won’t turn tender in time, and thinner slices collapse into mush under the béchamel.

The typical mistakes and how to avoid them
The most common mistake is using potato slices that are too thick. If you go for thicknesses over 4 mm, you’ll end up with raw centres in the potatoes while the top is already browned — the solution is a mandoline on the 2-3 mm setting. The next mistake is meat sauce that’s too wet, which makes the whole dish flow out and separate at the bottom; reduce the sauce for 10 minutes before you assemble the layers, so it binds around the potatoes instead of pooling. The third classic is forgetting the foil in the first 20 minutes — without foil the top dries out before the potatoes are tender, so always cover at the start and remove the foil at the end to give the cheese colour.
How to serve potato lasagne
Potato lasagne is a filling dish that stands well on its own, but a fresh contrast lifts it to dinner format:
- A green salad with red wine vinegar dressing and thin red onion rings
- Crispy roasted root vegetables or steamed broccoli on the side
- A glass of dark Italian red wine or a cold lager
- Garlic bread to mop up the last of the sauce from the plate
Storage and reheating
The leftovers keep for 3 days in the fridge in an airtight container. Reheat in the air fryer at 160 °C for 8-10 minutes with a piece of foil loosely over the top — this stops the cheese from burning while the middle heats through. Freeze in portions for up to 2 months, and always thaw overnight in the fridge before reheating. The microwave works in an emergency, but you lose the crisp top layer that is the whole point of the air fryer version.
Potato lasagne in the air fryer is the kind of dish that becomes a fixture, because it’s simple, filling and always delivers. If you turned on the air fryer half an hour ago, you now have a creamy, crisp plate ready for the table — without a single big oven dish to wash up afterwards.
FAQ
No, thin 2-3 mm slices turn tender during baking in the air fryer. Pre-cooking makes them too soft and can cause the layers to collapse before the dish is done.
Yes, but reduce the time by 5 minutes, as sweet potatoes turn tender faster. They also make the dish sweeter, so consider adjusting the seasoning in the meat sauce with a little more salt and oregano.
Grated mozzarella gives the classic stringy look, while a mix of mozzarella and Parmesan adds depth and a crisper edge. Cheddar works too, but gives a greasier result.

Ingredients
Meat Sauce
- 500 g minced beef
- 1 pcs onion (Finely chopped)
- 2 clove garlic (Finely chopped)
- 400 g chopped tomatoes (1 tin)
- 2 tbsp tomato purée
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tbsp olive oil
- 1 tsp salt

- 0.5 tsp pepper (Freshly ground)
Lasagne Layers
- 1000 g potatoes (Waxy, e.g. Asterix)
- 200 ml whipping cream
- 100 g mozzarella (Grated)

- 50 g Parmesan (Grated)

- 1 pinch nutmeg
How to make it
Preparation
- Preheat the air fryer to 180 °C fan.
- Peel 1000 g potatoes and cut them into thin 2-3 mm slices with a mandoline or a sharp knife. Put the slices in a bowl of cold water to stop them browning.
- Finely chop 1 pcs onion and 2 clove garlic.
Make the Meat Sauce
- Heat 1 tbsp olive oil in a frying pan over medium heat. Sauté the chopped onion and garlic for 2-3 minutes, until the onion is translucent.
- Add 500 g minced beef and brown it well, breaking up the meat with a wooden spoon.
- Stir in 2 tbsp tomato purée, 400 g chopped tomatoes, 1 tsp dried oregano, 1 tsp dried basil, 1 tsp salt and 0.5 tsp pepper. Let the sauce simmer for 10 minutes until slightly reduced.
Assemble the Lasagne
- Line an ovenproof dish that fits in the air fryer basket with baking paper. Pat the potato slices dry with a tea towel.
- Place a layer of potato slices in the bottom of the dish, spread a layer of meat sauce on top and drizzle with a little of the 200 ml whipping cream. Repeat the layers, finishing with a layer of potato slices on top. Pour the rest of the cream evenly over.
- Sprinkle 100 g mozzarella, 50 g Parmesan and 1 pinch nutmeg evenly over the top.
Cooking in the Air Fryer
- Put the dish in the air fryer at 180 °C fan for 30-35 minutes. Cover loosely with foil for the first 20 minutes if the cheese browns too quickly.
- Check that the potatoes are tender with a fork and that the cheese is golden. Let the lasagne rest for 5 minutes before cutting it and serving.
Our notes for the recipe
Slice the potatoes evenly thin — this ensures even cooking. A mandoline gives the best result. Waxy potatoes hold their shape best and don’t turn too mealy. Variation:
Swap the mozzarella for grated mature cheese for a stronger flavour, or use half veal and half pork in the meat sauce for a more classic Italian profile. A layer of spinach leaves between the layers makes the dish even heartier. Serving:
Serve with a fresh green salad with vinaigrette and a slice of good bread to soak up the juices. Portion size:
If your air fryer is smaller, you can split the lasagne into two smaller dishes and bake them in two batches.
