Turkey breast with herbs in the air fryer is one of those dishes that has surprised me the most. I’ve always had a slightly strained relationship with turkey, because it dries out so easily in the oven – but with the air fryer and the right herb blend, you suddenly get a golden-brown, almost roasted surface, while the core stays juicy and tender. This is the kind of Sunday dish that also fits perfectly on a Tuesday, and that tastes as if you’ve spent far longer in the kitchen than you actually have.

Why I love turkey breast with herbs in the air fryer
A good turkey breast needs to nail three things at once: a golden-brown surface, a core temperature right in the green zone, and herbs that don’t burn along the way. In the air fryer I get all three without having to watch it constantly, the way I do in the oven. A piece of turkey breast of 800-1000 grams is done in 28-32 minutes at 175°C, and I never use more than two minutes of preheating. The concentrated, circulating heat also gives the herbs a chance to release their oils and aroma straight into the meat – instead of evaporating up into a big, cold oven.
The difference between air fryer and oven
In the oven I need at least 50-60 minutes at 170°C to get the same result, and I almost always end up with a dry surface. The air fryer’s modest space and turbo air circulation mean the meat cooks evenly all the way around, without me having to turn it halfway through. That saves time, energy and the classic drama over whether the turkey is actually done before the guests arrive.
My kitchen test of turkey breast with herbs
I’ve tested this dish eight or nine times over the past six months, both with whole turkey breast fillets and boneless pieces in different sizes. The optimal combination for me is 175°C for 28-32 minutes for a piece of around 800 grams, and I consistently hit a core temperature of 72-74°C when I measure in the middle of the thickest part. In my tests, 180°C gave slightly too aggressive surface cooking on the herbs – they got burnt at the edges before the core was ready. At 170°C, on the other hand, I got a beautifully juicy core, but a slightly pale surface without the crispness I’m after. That’s why 175°C has become my go-to temperature, and I always let the meat rest for 8-10 minutes under a piece of foil before I cut into it.
Rub the herbs thoroughly into the meat with olive oil at least 20 minutes beforehand – that way the flavour penetrates, and the herbs don’t burn in the air fryer.

The typical mistakes and how to avoid them
The first classic mistake is cutting too early. If you cut right after the air fryer, all the juices run out of the meat, and you’re left with dry turkey on the plate. Always give it at least 8-10 minutes of rest under foil. The second mistake is placing the turkey breast directly on the air fryer rack without oiling the surface – then the herbs don’t stick properly, and you lose half the flavour down into the basket. Use 1-2 tablespoons of olive oil, and rub the herbs thoroughly into the meat. The third mistake is skipping the core temperature measurement. Turkey requires precision, and a meat thermometer costs around €10-20 at most supermarkets. Measure in the middle of the thickest piece, and take the meat out exactly at 72°C – the residual heat brings the rest up to 74°C during resting.
How to serve turkey breast with herbs
This turkey breast is incredibly versatile and can be paired with both rustic and more elegant sides. Here are my favourites:
- Baked potatoes with skin and garlic from the air fryer
- A coarse mushroom sauce with onion, cream and fresh thyme sprigs
- Oven-roasted root vegetables: parsnip, carrot and beetroot
- A tangy apple and onion compote as a contrast to the herbs
- Sautéed Brussels sprouts with a little honey and coarse mustard
Storage and reheating
Turkey breast keeps well for 2-3 days in the fridge, wrapped in foil or placed in an airtight container. I prefer to slice it before putting it in the fridge, so it’s easier to use as a sandwich filling or in salads the next day. Reheating in the air fryer takes 3-4 minutes at 160°C – feel free to add a few drops of water or a little stock to the bottom of the basket to keep it juicy.
FAQ
A piece of turkey breast of 800-1000 grams needs 28-32 minutes at 175°C. Always check the core temperature – it should reach 72-74°C in the middle of the thickest part.
175°C is my go-to temperature. At 180°C the herbs burn too easily, and at 170°C the surface doesn’t get crispy enough. 175°C gives the perfect balance between a juicy core and a golden-brown crust.
No – always thaw the turkey breast completely in the fridge overnight first. Frozen turkey gives uneven cooking, where the core stays raw while the surface dries out. Thawing ensures even cooking and a juicy result.
Turkey breast with herbs in the air fryer has become, for me, a fantastic example of how much easier the air fryer makes otherwise complicated dishes. Give it a chance the next time you’re looking for a juicy, flavourful main course for the family – you definitely won’t be going back to the oven.

Shopping list
Ingredients
Turkey Breast
- 700 g fresh turkey breast (In one piece)
- 2 tbsp olive oil
- 1 tsp Dijon mustard
- 1 tsp salt

- 1 tsp pepper (Freshly ground)
Herbs and Seasoning
- 3 clove garlic (Crushed)
- 2 tsp fresh thyme (Finely chopped, or 1 tsp dried)
- 1 tsp fresh rosemary (Finely chopped, or 0.5 tsp dried)
- 1 tsp lemon zest (Finely grated, from an organic lemon)
- 1 tbsp fresh parsley (Chopped, for garnish)
How to make it
Preparation
- Take the 700 g fresh turkey breast out of the fridge 30 minutes before cooking so it can come to room temperature. This gives a more even and juicy roast.
- Pat the turkey breast dry with kitchen paper. Remove any sinews and membranes.
- Crush 3 clove garlic and finely chop 2 tsp fresh thyme and 1 tsp fresh rosemary. Grate 1 tsp lemon zest from an organic lemon.
- Mix 2 tbsp olive oil, 1 tsp Dijon mustard, the garlic, thyme, rosemary, lemon zest, 1 tsp salt and 1 tsp pepper together in a small bowl to make a marinade.
- Rub the marinade thoroughly into the entire turkey breast, including the underside. Let it sit while the air fryer preheats.
Cooking in the Air Fryer
- Preheat the air fryer to 180 °C.
- Place the turkey breast skin-side up (or the nicest side up) in the air fryer basket.
- Cook the turkey breast for 30-35 minutes at 180 °C. Turn it halfway through for an even crust. (Check on it a few times along the way.)
- Check the core temperature with a meat thermometer in the thickest part – it should be 73-75 °C for a juicy, fully cooked result.
- Take the turkey breast out and let it rest on the chopping board, loosely covered with foil, for 5-10 minutes. The resting time is important for juiciness.
Serving
- Cut the turkey breast into thin slices across the grain.
- Sprinkle with 1 tbsp fresh parsley and serve immediately with your favourite sides.
Our notes for the recipe
Always use a meat thermometer – turkey breast is lean and quickly turns dry if overcooked. 73-75 °C is the perfect core-temperature window. Brine for extra juiciness:
If you have time, you can place the turkey breast in a brine (3 tbsp salt per litre of cold water) for 2-4 hours before cooking. It makes the meat noticeably more tender and juicy. Variation:
Swap the thyme and rosemary for sage and marjoram for a different aromatic profile. You can also add a touch of paprika or chilli for more colour and heat. Serving:
Goes perfectly with baked potatoes, air-fried vegetables, a fresh salad or a creamy mushroom sauce. Leftovers can be used in sandwiches, wraps or salads the next day. Portion size:
If your air fryer is smaller, choose a turkey breast that fits in the basket, or cut it into two pieces and cook them one after the other.
