Cheese on toast is the British take on the warm cheese sandwich, and it is exactly as simple as the name promises: thick slices of white bread, coarsely grated mature cheddar, a splash of Worcestershire sauce and a good twist of the pepper mill. No sauce to stir together and no frills – just cheese that melts, bubbles and picks up golden spots on a crisp base.

With the air fryer you don’t have to switch on the oven grill for a couple of slices of bread. The slices are toasted first so they stay crisp under the cheese, and afterwards everything is baked at 200 °C until the cheese bubbles. The whole recipe takes 21 minutes, and the dish fits right in as an easy lunch, a cosy weekend brunch or a warm snack.

Why I love Cheese on Toast in the air fryer
I have a weakness for British everyday dishes that don’t try to be more than they are, and cheese on toast is the best example. The flavour comes from the mature, slightly sharp cheddar, from the deep, spiced note of the Worcestershire sauce and from the bread, which crunches under the melted cheese – and the whole thing needs only four ingredients.
The air fryer is made for this kind of quick food. The hot air toasts the bread in a few minutes, and then it browns the cheese until it bubbles and picks up the characteristic golden spots.
Air fryer rather than the oven grill
In Britain, cheese on toast is traditionally made under the oven grill. For a handful of slices, though, it is a lot to heat up a whole oven, and the grill can quickly go from golden to burnt. In the air fryer the heat is concentrated close around the slices, and you can pull out the basket and check on the cheese along the way.
My kitchen test of Cheese on Toast
I tested the recipe in my Cosori Dual Blaze, where the heating elements above and below the basket give the bread a firm, crisp base, while the cheese browns from above. First I toast the slices at 200 °C for 4 minutes and turn them with tongs after 2 minutes, so both sides turn lightly golden. After that I cover them with cheese right out to the edge, press it down lightly and drizzle Worcestershire sauce over it before the pepper goes on. The slices then get 3-4 more minutes at the same temperature, until the cheese bubbles and has developed golden spots.
The recipe takes 21 minutes in total: 5 minutes of preparation and 16 minutes of cooking, because the eight slices typically need to be toasted and baked in two batches. In my Philips XXL there is room for four thick slices in a single layer, and if you have a smaller air fryer, you simply do more batches. The most important thing the test taught me was to press the cheese down: the first time I let it lie loose, and a couple of strips blew over the edge and burnt onto the bottom of the basket.
Grate the cheese yourself, and press it down lightly with the palm of your hand before the slices go into the basket. That way it melts evenly and stays put on the bread, even when the fan is running.

The typical mistakes and how to avoid them
The most common mistake is to put the cheese directly on the untoasted bread. When the cheese melts, moisture and fat soak down into the crumb, and you end up with something soft and slightly stodgy. That is why you should always toast the slices first, giving them a firm surface that can carry the cheese.
The next mistake is to leave the edges bare and the cheese lying loose. Bare bread burns quickly at 200 °C, and loose strips get blown around by the airflow, so cover the slices right out to the edge and press the cheese down lightly. The third mistake is to overfill the basket. If the slices overlap, the cheese melts unevenly and the bread goes soft where they lie on top of each other – lay them in a single layer and do an extra batch instead.
How to serve Cheese on Toast
Cheese on toast tastes best while the cheese is still bubbling, so serve it straight away. Here are my favourites to go with it:
- A bowl of hot tomato soup for dipping strips of the bread in
- The slices cut into triangles for the lunch table
- A green salad with a fresh, tangy dressing
- Cherry tomatoes or thin slices of tomato laid under the cheese
- A dollop of chutney and a cup of tea, if you want to go fully British
Storage and reheating
Cheese on toast is best on the day it is made, while the bread is crisp and the cheese soft. If you have slices left over, they keep for 1-2 days in the fridge, covered. Reheat them in the air fryer at 160 °C for 3-5 minutes, so the cheese melts again and the bread regains some of its crispness. The dish is not suitable for freezing, so it is better to make a fresh portion – it doesn’t take long.
Cheese on toast proves that good food doesn’t have to be complicated. With good bread, a proper mature cheddar and your air fryer, you have a warm British classic on the table before you’ve even had time to lay the table.
FAQ
Cheese on toast is grated cheese placed directly on toasted bread and browned. For Welsh rarebit, the cheese is first stirred into a thick sauce, often with beer and mustard, which is then spread on the bread and browned.
A mature white cheddar gives the classic, slightly sharp flavour and melts nicely. Grate it yourself, because pre-grated cheese has starch added and doesn’t melt as evenly.
Not always. Classic Worcestershire sauce contains anchovies, so choose a vegetarian version of the sauce if the dish needs to be vegetarian.

Shopping list
Ingredients
- 8 slices white bread (Thick-cut, about 1.5 cm)
- 250 g mature white cheddar (Coarsely grated)
- 2 tsp Worcestershire sauce
- 0.5 tsp black pepper (Freshly ground)

How to make it
Preparation
- Coarsely grate 250 g mature white cheddar on a grater.
Cooking in the air fryer
- Preheat the air fryer to 200 °C fan.
- Toast 8 slices white bread in the basket at 200 °C for 4 minutes – in a single layer and in batches according to the size of the basket, typically 4 slices at a time. Turn the slices over with tongs after 2 minutes so that both sides turn lightly golden and firm.
- Lay the toasted slices on a cutting board and cover them evenly with the grated cheese, right out to the edges, so there is no bare bread that can burn.
- Press the cheese down lightly with the palm of your hand or the back of a spoon, so it stays put and isn’t blown about by the air fryer’s fan.
- Drizzle 2 tsp Worcestershire sauce evenly over the cheese and season with 0.5 tsp black pepper.
- Put the slices back in the basket in a single layer, again in batches, and bake them at 200 °C for 3-4 minutes, until the cheese has melted, is bubbling and has developed golden spots.
Serving
- Take the slices out with the tongs, let them stand for a moment so the cheese can set, and serve straight away while the cheese is still bubbling hot.
Our notes for the recipe
Toast the bread before the cheese goes on – that way it stays crisp under the melted cheese. Cover the slices right out to the edges so the crust doesn’t burn, and press the cheese down lightly so the air fryer’s fan doesn’t blow the loose shreds around. Grate the cheese yourself: pre-grated cheese has starch added and doesn’t melt quite as nicely. Cheese on Toast is grated cheese straight on toasted bread – not Welsh rarebit, where the cheese is first stirred into a sauce. Variation:
Put thin slices of tomato under the cheese, or give the top an extra splash of Worcestershire sauce if you like a bolder flavour. Classic Worcestershire sauce contains anchovies – choose a vegetarian version if the dish needs to be vegetarian. Serving:
Serve straight away, preferably cut into triangles or strips, with a green salad, cherry tomatoes or a bowl of tomato soup. Portion size:
The recipe is based on 2 slices per person. There is typically room for 4 slices in the basket at a time; if you have a smaller air fryer, toast the bread and melt the cheese in several batches – each batch takes only a few minutes.
