Cornbread in the air fryer is my shortcut to the golden, lightly sweet bread that belongs next to a pot of chili or a table full of barbecue. This version follows the style of the Northern states: cornmeal and plain flour with sugar, buttermilk and melted butter, stirred together just until combined. The crumb turns out soft and moist, with a distinct taste of corn.

The secret is the pan: it is heated first with butter in the basket, so the batter sizzles when it hits the metal. That gives the crisp, golden edges that are the whole point of a good cornbread. From the moment you take out the bowl until the squares are on the table with butter and honey, it takes 44 minutes – including the cooling time in the pan.

Why I love cornbread in the air fryer
Cornbread is one of the easiest bakes you can make. There is no kneading and no rising time, and the batter is happiest when it is stirred as little as possible: the dry ingredients in one bowl, the wet in another, and then everything is folded together with a dough scraper. That makes the bread an obvious choice for a weeknight when the chili is already simmering.
The air fryer is perfect for a small batch. A pan of about 18 x 18 cm makes 9 squares – roughly two pieces each when there are four of you – and you don’t have to heat up a whole oven for a single pan of bread.
Sweet cornbread in the Northern-states style
In the US, opinions are divided on sugar in cornbread. In the Southern states it is traditionally baked with mostly cornmeal and little or no sugar, often in a smoking-hot cast iron skillet. The Northern version, which this recipe follows, gets plain flour and sugar in the batter and a softer, more cake-like crumb. The hot, buttered pan, though, I have borrowed from the South, because that is what gives the edge.
My kitchen test of cornbread
I baked the cornbread in my Cosori Dual Blaze, which has heating elements both above and below the basket, so the bottom and top turn evenly golden. The pan with 15 g of butter gets 4 minutes at 180 °C, until the butter is sizzling. Then the batter goes in, the temperature is turned down to 160 °C, and the bread bakes for 20 minutes without me shaking the basket, so it can rise undisturbed.
I have also baked it in my Philips XXL with the same pan. Whichever model you use, the toothpick is the surest sign: if it comes out dry from the middle, the cornbread is done, and otherwise the bread needs 2-3 more minutes at 160 °C. The 10 minutes of resting in the pan are not just for show either – the crumb sets, so the squares hold together when you cut them.
Pour the batter in while the butter is still sizzling in the hot pan. When the batter sizzles along the edge, you know you are getting that crisp crust – a cold pan gives a soft, pale edge.

Common mistakes and how to avoid them
The first mistake is stirring too much. If you whisk the batter smooth, the cornbread turns tough and dense, so fold it together only until there is no dry flour left – small lumps are perfectly fine. The second is a cold pan or a silicone pan, because neither gives the crisp edge. Use a metal pan, and let it heat up with the butter in the basket before the batter goes in. The third is a top that gets too dark before the middle is baked. The heating element sits close to the surface in an air fryer, so lower the temperature to 150 °C for the last few minutes if the top browns too quickly.
How to serve cornbread
Cornbread is just as good as a side dish and on its own with something sweet on top. Here are my top picks:
- Warm squares with soft butter and honey – or with the two stirred together into honey butter
- With a pot of chili con carne, where the cornbread mops up the last bits from the plate
- Alongside pulled pork and other barbecue dishes
- With a hearty soup on a cold evening
- As a spicy version with 50 g grated cheddar and 1 finely chopped jalapeño folded into the batter
Storage and reheating
The cornbread keeps in an airtight bag at room temperature for up to 2-3 days. If you want to keep it longer, it can be frozen for up to 3 months – thaw it in the fridge overnight. Reheat the squares in the air fryer at 160 °C for 3-5 minutes, so they turn warm again and the edge gets some of its crispness back.
With a hot, buttered pan and a batter that is only just mixed, you get cornbread with a crisp edge and a soft crumb every time. Bake it for your next chili night, or enjoy it with butter and honey alongside your afternoon coffee.
FAQ
No. Cornstarch such as Maizena gives a completely different texture. Use yellow cornmeal or fine polenta – coarse cornmeal can also be used and gives a more rustic crumb with a bit of bite.
Insert a toothpick into the middle of the bread. If it comes out dry, the cornbread is done. If there is wet batter on it, bake it for 2-3 more minutes at 160 °C, and check again.

Ingredients
How to make it
Preparation
- Melt 75 g butter in a small saucepan over low heat, and let it cool slightly.
- Whisk 2 pcs eggs and 2 dl buttermilk together in another bowl, and finally whisk in the melted butter.
- Pour the egg mixture over the dry ingredients, and stir with a dough scraper only until there is no dry flour left. Small lumps are perfectly fine – if you stir too much, the cornbread turns tough.
Cooking in the air fryer
- Put 15 g butter in the baking pan, and place the pan in the basket. Preheat the air fryer to 180 °C fan. Let the pan heat up with it for 4 minutes, until the butter has melted and is sizzling.
- Pull out the basket, and carefully tilt the pan with oven gloves so the butter coats the bottom and sides. Pour the batter into the hot pan – it should sizzle along the edge – and smooth out the surface.
- Slide the basket back in, lower the temperature to 160 °C, and bake the cornbread for 20 minutes, until it has risen and turned golden. Don’t shake the basket while it bakes – the bread needs to be left undisturbed to rise.
- Insert a toothpick into the middle of the bread. If it comes out dry, the cornbread is done. If there is wet batter on it, bake it for 2-3 more minutes at 160 °C, and check again.
Serving
- Take the pan out with oven gloves, and let the cornbread cool in the pan for 10 minutes so the crumb can set.
- Loosen the edges with a knife, turn the cornbread out onto a cutting board, and cut it into 9 squares.
- Serve the squares warm with 40 g butter and 3 tbsp honey.
Our notes for the recipe
Stir the batter only until just combined – small lumps are fine, while too much stirring gives a tough, dense cornbread. Use a metal pan, and pour the batter in while the butter is still sizzling – it’s the hot, buttered pan that gives the crisp edges. Silicone won’t give the same edge. If the top gets too dark before the middle is baked, lower the temperature to 150 °C for the last few minutes – in an air fryer the heating element sits close to the surface. The right cornmeal:
Use yellow cornmeal or fine polenta – not cornstarch such as Maizena, which gives a completely different texture. Coarse cornmeal gives a more rustic crumb with a bit of bite. Variation:
Fold 50 g grated cheddar and 1 finely chopped jalapeño into the batter for a spicy version, or stir the softened butter together with the honey to make honey butter. Serving:
Cornbread is a classic side for chili con carne, pulled pork, barbecue and hearty soups, but it also tastes great on its own with butter and honey. Pan size and servings:
The recipe makes 9 squares in a pan of about 18 x 18 cm – roughly 2 pieces per person. If you have a round basket, you can use a round pan of 18-20 cm and cut the bread into wedges. A smaller pan gives a thicker bread, which needs a few more minutes.
