Why I love strawberry gratin in the air fryer
The big advantage of the air fryer here is that the heat sits close to the food and circulates fast. The topping takes on colour in a few minutes, while the berries underneath only have time to turn warm. That is the whole point of a fruit gratin: the contrast between the juicy, cool berry and the hot, lightly caramelised surface. In an ordinary oven you usually have to reach for the grill setting and watch it closely, and even then it is a long way from the base of the dish up to the heating element.
At the same time, you avoid heating up a whole oven for a dessert that fills two small ramekins. The air fryer is ready straight away, and because it holds the temperature precisely, you can put the next batch in with no waiting.

An oven grill works with radiant heat from a single element, and the result is easily uneven: the edges brown while the middle is still pale. The air fryer combines a heating element with a fan, so the air moves all the way around the dish and the surface browns more evenly. In return, you need to pay attention for the last couple of minutes. Eight minutes at 180 °C is not long, and the step from golden brown to burnt is a short one.
My kitchen test of strawberry gratin
I have made this dessert half a dozen times in my Cosori Dual Blaze, and 180 °C for 8 minutes is the point where the topping bubbles and has picked up golden patches without the berries collapsing. My first attempts ran hotter and shorter; the surface looked right, but the middle was still cold. Slightly lower heat and the full 8 minutes is the way to go.
The preparation takes the 15 minutes the recipe states, and most of it goes on hulling and halving the berries and stirring the topping smooth. The dual basket is an advantage here, because I can slide two ramekins in side by side. If you have a single-basket model, make them in two batches — the 8 minutes go quickly, and the first portion stays nicely warm in the meantime.
Take the strawberries out of the fridge half an hour beforehand. Ice-cold berries draw the heat out of the dish, and then the topping browns long before the dessert is warmed through.

The mistake I see most often is berries that are too wet. Strawberries rinsed just before use and put straight into the dish give off liquid in the heat, and then the topping spreads out into a pink lake — rinse them well in advance and pat them thoroughly dry first. The second mistake is overfilling the dish. The berries should lie in a single layer, not in heaps; if they sit on top of each other, the heat does not reach the bottom and you end up with a browned surface over cold berries. The third is walking away from the air fryer. Eight minutes sounds like a lot, but it is the last two that decide the colour, and there is no way back once the sugar has tipped from caramel to bitter. Stay by the basket and pull the dish out the moment the surface has its golden patches.
How to serve strawberry gratin
The dessert should be eaten warm and soon after it comes out — it is the contrast between the hot topping and the cool berries that makes it. A few things that suit it well:
- A scoop of vanilla ice cream melting slowly down into the hot topping
- Toasted flaked almonds or roughly chopped pistachios scattered over just before serving
- A light dusting of icing sugar and a few fresh mint leaves
- A crisp biscuit or a macaroon on the side if you want something with bite

The topping, on the other hand, can happily be stirred together several hours ahead and kept in the fridge, so all that is left is assembling the ramekins once your guests are at the table.

Strawberries
- 500 g fresh strawberries
- 1 tbsp cane sugar (For tossing the berries)
Mascarpone cream
- 3 pcs egg yolks (At room temperature)
- 75 g sugar
- 150 g mascarpone
- 1 tsp vanilla sugar
- 2 tbsp orange liqueur (Can be replaced with freshly squeezed orange juice)
For gratinating
- 2 tbsp soft brown sugar (For sprinkling)
How to make it
Preparation
- Rinse 500 g fresh strawberries, remove the stalks and halve the largest ones. Divide the berries between four small ramekins and toss them gently with 1 tbsp cane sugar. Leave them to macerate while you make the cream.
- Whisk 3 pcs egg yolks and 75 g sugar pale and airy with an electric mixer for about 3 minutes, until the mixture is thick and falls in ribbons from the beaters.
- Fold 150 g mascarpone, 1 tsp vanilla sugar and 2 tbsp orange liqueur into the egg cream with a silicone spatula, until it is smooth and thick.
- Spoon the cream evenly over the berries so they are covered by a layer about 1 cm thick. Leave a couple of millimetres to the rim of the dish, as the cream rises slightly during baking.
- Sprinkle 2 tbsp soft brown sugar evenly over the cream. It is the brown sugar that gives you the golden brown, caramelised surface.
Cooking in the air fryer
- Preheat the air fryer to 180 °C on the fan setting.
- Place the ramekins in the basket in a single layer with air between them, and bake them at 180 °C for 6-8 minutes, until the cream bubbles gently at the edges and the surface is golden brown. Keep an eye on them for the last 2 minutes, as the brown sugar caramelises quickly in the hot air.
Serving
- Take the ramekins out and leave them to rest for 3-4 minutes. The cream sets slightly and the berry juice settles, so the dessert isn’t piping hot to eat.
- Serve the gratin warm straight from the ramekins, ideally with a scoop of vanilla ice cream or a few fresh mint leaves alongside.
