Why decorate gingerbread biscuits?
The decoration is not only about aesthetics; it is also an opportunity to create memories. Decorating them together with family or friends is an activity that brings generations together. In addition, decorated biscuits make fantastic gifts when they are beautifully wrapped.
The ingredients in gingerbread biscuits
Spices and flavour
The flavour of these little biscuits is their soul. Classic spices such as cinnamon, ginger and cloves are essential for their characteristic warmth and depth. You can also add cardamom or a hint of orange zest for an extra dimension. Always use fresh spices for the best flavour.
Golden syrup, sugar and butter
The dough needs the right consistency so that it can be rolled out and shaped. Golden syrup and sugar act as sweeteners and give the dough its characteristic flavour and colour. Butter binds the dough together and adds a rich flavour.
Try adding a little black pepper to the dough. Although it may sound unusual, it brings out the warm spices such as cinnamon and ginger and gives the gingerbread biscuits a subtle yet intriguing depth of flavour.

I recommend this fresh apple fizz to go with our gingerbread biscuits
Gingerbread biscuits made in the air fryer are a classic, and a good fizzy drink works really well as a counterpoint to the spices. I can warmly recommend the organic apple fizz (33 cl bottle) – it is a favourite with young and old alike. Kind regards, Morten.
What you need for decorating
Piping bag and nozzles
Good equipment is the starting point for biscuit decorating. Piping bags and nozzles are essential for creating fine details and patterns. For beginners, it is recommended to start with a thin nozzle for outlines and a wider nozzle for filling.
Edible decorations and sprinkles
Edible decorations such as sugar pearls, sugar sprinkles and coloured icing make your biscuits shine. Choose natural and organic products for a cleaner result.
How to decorate the gingerbread biscuits
Outlines and filling with icing
Icing is the key to beautifully decorated biscuits. Start by piping the outlines onto the biscuit and let them dry. Then fill the centre with a runnier icing for a smooth surface.
Colour the icing
By mixing colours, you can create unique designs. Use a palette to mix the colours, and experiment with pastel shades for a sophisticated effect.
Tips for perfect gingerbread biscuits in the air fryer
Common mistakes
A common mistake is rolling the dough out too thin, which can result in fragile biscuits. Aim for a thickness of about 3 mm – thinner and they become fragile, thicker and they stay soft in the middle. Also avoid applying the icing while the biscuits are still warm.
Storage and gift wrapping
Store the gingerbread biscuits in an airtight container and they will stay crisp for up to 2 weeks. If you give them as gifts, you can wrap them in cellophane bags and tie them with a ribbon. Use baking paper between the layers to stop the icing from rubbing off.

FAQ
Roll the dough out to about 3 mm. That way, the gingerbread biscuits turn crisp in 5–6 minutes at 160 °C. Thicker biscuits stay soft in the middle.
They are slightly darker around the edges and firm on the surface. They are still soft when they come out, but turn crisp as they cool on a wire rack.
In an airtight container, they keep for up to 2 weeks. They can also be frozen without the icing. Let the icing dry completely before putting them in the container with baking paper between the layers.
