Pinchos morunos are small skewers of marinated pork found on the tapas bar in almost every town in southern Spain. The meat is cut into small cubes and left to soak in olive oil, smoked paprika, cumin, garlic and oregano until the marinade has turned it all deep red. The scent of smoke and warm spices announces itself long before the skewers ever reach the basket.

In the air fryer, the short skewers get exactly the treatment they need: dry, circulating heat all the way around, dark crispy edges and a center that stays juicy. It takes 12 minutes at 200 °C, once the meat has had its two hours in the marinade. No grill, no smoke in the kitchen — just Spanish tapas on a perfectly ordinary Wednesday.

Why I love marinated pork skewers in the air fryer

The marinade does almost all the work, and all it takes is a mixing bowl and a little patience. Pork neck fillet is the right cut, because the fat marbling melts under the high heat and keeps the cubes juicy. A lean chop would turn dry long before the edges had a chance to crisp up.

At the same time, the air fryer solves what’s usually the tricky part with pinchos: even heat. Eight short skewers sit freely in the basket, and the hot air hits them from every side, so you avoid shuffling them around in a pan where the middle always gets hottest. The dish serves four as a lunch, or a larger crowd if it’s part of a tapas spread.

The difference between air fryer and grill

On a charcoal grill, the oily marinade drips down onto the coals and causes flare-ups that char the meat long before it’s cooked through. The air fryer holds a constant 200 °C, and the fat collects at the bottom instead of burning. You lose a touch of the grill’s smoky flavor, but the smoked paprika more than makes up for it — and you can make the dish in the middle of January.

My kitchen test of marinated pork skewers

I made the skewers in my Cosori Dual Blaze at 200 °C, and 12 minutes is exactly the point where the edges turn dark and crispy without the center drying out. I flipped them after 6 minutes so both sides got the same treatment. The thermometer read 70 °C in the thickest cube, and that’s where the pork is cooked through and still juicy.

The prep itself — cutting the meat, making the marinade and threading the skewers — took me 20 minutes, and then the meat sat in the fridge for two hours. Start to finish, the dish takes you 152 minutes, but only about half an hour of that requires you to actually be in the kitchen. I let the skewers rest for 5 minutes after the basket, so the meat juices could settle before the first cube got torn off.

Pat the cubes dry with paper towel before threading them onto the skewers. Excess marinade steams instead of searing, and then you won’t get the crispy edges you’re after.

The typical mistakes and how to avoid them

The most common mistake is cutting the marinating time short. In under two hours, the smoked paprika and cumin only manage to sit on the surface, and you end up with a spiced crust around unseasoned meat. Give it the full two hours, or let it sit overnight — but no more than 24 hours, since the lemon juice will gradually make the texture soft and mealy. The next mistake is an overcrowded basket: if the skewers lie on top of each other, the meat steams instead of searing, and the edges turn gray. Lay them in a single layer with air between them, and run two batches instead, keeping the first one warm under a sheet of foil. Finally, the skewers themselves. Use short metal skewers that sit freely in the basket; wooden skewers don’t belong in an air fryer, and skewers that are too long will hit the sides, so the meat won’t get heat all the way around.

How to serve marinated pork skewers

Pinchos morunos need something acidic and something that can soak up the oil. Here’s how I serve them:

  • Lemon wedges to squeeze over the warm meat, with coarsely chopped parsley sprinkled on top
  • A piece of good bread and a bowl of olives — the classic Spanish version
  • Patatas bravas and a garlic dressing, if you want a proper tapas spread
  • Cubes of red pepper and red onion threaded between the meat cubes, turning the skewers into a full meal
  • A cold beer or a glass of young tempranillo

Storage and reheating

Covered, the skewers keep in the fridge for up to 3-4 days. Reheat them in the air fryer at 170 °C for 4-6 minutes, until the meat is heated through. The lower temperature is deliberate: at 200 °C, the crispy edges would burn before the center gets hot. The skewers can also be frozen for up to 3 months — just thaw them in the fridge overnight before their turn in the basket. Cold leftovers are also excellent in a pita with salad the next day.

Marinated pork skewers are the kind of dish where the prep is minimal and the payoff is huge. Mix the marinade in the morning, put the bowl in the fridge, and you’ll have Spanish tapas on the table 12 minutes after the air fryer is hot.

How to make it

Marinating

  • Cut 700 g pork neck fillet into even cubes of about 2.5 centimetres. Even-sized cubes are essential, as they’ll all get the same cooking time in the basket.
  • Stir 3 tbsp olive oil, 2 tsp smoked paprika, 2 tsp cumin, 3 clove garlic, 1 tsp dried oregano, 1 tsp ground coriander, 1 tsp salt, 1 tsp black pepper and 1 tbsp lemon juice together in a mixing bowl to make a thick, deep red marinade.
  • Turn the meat cubes in the marinade until each one is coated on all sides. Cover the bowl, and place it in the fridge for at least 2 hours — ideally overnight, so the spices penetrate all the way into the meat.

Cooking in the air fryer

  • Take the meat out of the fridge 15 minutes before cooking, and thread the cubes onto short metal skewers. Leave a small gap between the cubes so the hot air can circulate around them, and pat off any excess marinade with a piece of kitchen paper.
  • Preheat the air fryer to 200 °C fan.
  • Place the skewers in a single layer in the basket without letting them overlap, and cook them at 200 °C for 12 minutes.
  • Turn the skewers after 6 minutes, so the meat gets crisp edges all the way round.
  • Check the core temperature in the thickest cube with a meat thermometer. It should be 70 °C. Give the skewers another 2-3 minutes at 200 °C if the meat isn’t cooked through.

Serving

  • Leave the skewers to rest for 5 minutes outside the basket. Sprinkle them with 2 tbsp fresh parsley, and serve with 1 pcs lemon cut into wedges, so the juice can be squeezed over the warm meat.

Tips for a perfect result:
Pat the cubes dry before threading them onto the skewers. Excess marinade will steam rather than sear, so the edges won’t turn crisp. The skewers need to lie freely in the basket — never on top of each other.
Marinating:
2 hours is the minimum, but leaving it overnight clearly gives the deepest flavour. Don’t marinate the meat for more than 24 hours, as the lemon juice will gradually make the texture mushy.
Variation:
Swap the pork neck for diced chicken thighs (core temperature 75 °C), or replace half the smoked paprika with hot paprika if you want some heat. Cubes of red pepper and red onion between the meat cubes turn the skewers into a complete meal.
Serving:
Classic Spanish style, with a piece of good bread, a bowl of olives and a cold beer. As tapas, they go well with patatas bravas and a garlic aioli.
Portion size:
If your air fryer is smaller, you can make the dish in two batches. Keep the first batch warm under a piece of foil.
