Why I love bacon-wrapped chicken in the air fryer
Bacon-wrapped chicken is a Scandinavian everyday classic, and I come back to it whenever dinner needs to be easy but should still have real flavour. The bacon has two jobs: it adds flavour and saltiness, and it wraps around the lean chicken breast like a cloak, so the meat does not dry out. That is why the meat needs only a pinch of salt – the rest comes from the bacon.
In the air fryer, the hot air hits the bacon from all sides, so the fat melts off and drips down through the basket instead of pooling around the meat. The result is a crispy wrap without any added fat. If you want to vary the flavour, you can rub the meat with a little dried thyme or smoked paprika along with the pepper – or spread a thin layer of wholegrain mustard on the chicken before you wrap it.
The difference between an air fryer and an oven
In the oven, the wrapped chicken breasts sit in a dish, where the underside easily turns soft because the bacon cooks in its own fat. In the air fryer basket, the air also circulates under the meat, so the bacon turns crispy all the way around. At the same time, you avoid heating up a large oven for just four pieces of meat.
My kitchen test of bacon-wrapped chicken
I tested the dish in my Cosori Dual Blaze, where heating elements at both the top and the bottom cook the bacon evenly on the upper and lower side. At 180 °C, the wrapped chicken breasts first got 10 minutes with the seam facing down and then 8 minutes after I had carefully turned them with tongs. The meat thermometer showed 75 °C in the thickest part of the meat, and the bacon was golden and crispy.
The most important lesson from the test is that thickness decides the result. When the breasts are pounded out to about 2 cm, the meat is done before the bacon gets too dark. If you skip that step, the thin end dries out while the thick end still needs more time. The 5 minutes of resting on the cutting board are just as important: the juices settle, and when the chicken rests uncovered, the bacon stays crisp.
Stretch the bacon slices slightly as you wrap, and always place the chicken in the basket seam side down. That way the wrap stays closed on its own – without any skewers or kitchen twine.

The typical mistakes and how to avoid them
The first mistake is skipping the meat mallet. A chicken breast of uneven thickness cooks unevenly, so pound it lightly between two pieces of baking paper until it is an even thickness all over. The second mistake is salting the way you normally would. The bacon is salty in itself, and a pinch on the meat is plenty. The third mistake is packing the basket too tightly. If the chicken breasts lie right up against each other, the bacon steams instead of turning crispy, so leave a little air between them, and make the dish in two batches if your air fryer is small.
Also, trust the meat thermometer rather than the clock. If the chicken has not reached 75 °C after the 18 minutes, give it 2 more minutes at a time at 180 °C.
How to serve bacon-wrapped chicken
Cut the chicken breasts into thick, diagonal slices, or serve them whole. The bacon has a strong flavour, so choose side dishes that are fresh, crisp or tangy:
- Oven-roasted potatoes or new potatoes
- A green salad with a fresh dressing
- Cold crème fraîche dressing with chives
- Steamed green beans or broccoli
- Wholegrain mustard on the side
Storing and reheating
Leftovers keep covered in the fridge for up to 3-4 days. Reheat the chicken in the air fryer at 170 °C for 6-8 minutes, until it is heated through and the bacon is crisp again. The dish can also be frozen for up to 3 months; thaw it in the fridge overnight before reheating. Cold slices are also great in a sandwich or a salad the next day.

How to make it
Preparation
- Pat 4 pcs chicken breasts dry thoroughly with kitchen paper, and trim off any sinew and fatty edges.
- Place the chicken breasts one at a time between two pieces of baking paper, and pound them lightly with a meat mallet until they are an even thickness all over – about 2 cm. That way the meat is done before the bacon gets too dark.
- Rub the meat all over with 1 tsp black pepper and 1 pinch salt. Go easy on the salt, since the bacon is salty enough on its own.
- Divide up 12 slices bacon so there are 3 slices for each chicken breast, and lay them side by side so they overlap slightly.
- Wrap each chicken breast up snugly: lay it across the bacon slices, fold the ends up tightly around the meat so they overlap, and turn it over so the seam faces down and the ends are tucked under the meat.
Cooking in the air fryer
- Preheat the air fryer to 180 °C fan.
- Place the wrapped chicken breasts in the basket, seam side down and with a little space between them, and cook them at 180 °C for 10 minutes.
- Carefully turn them with tongs, and cook for a further 8 minutes at 180 °C, until the bacon is golden and crispy.
- Check the internal temperature with a meat thermometer in the thickest part of the meat. The chicken is done at 75 °C – if it is not there yet, give it 2 more minutes at a time at 180 °C.
- Transfer the chicken to a clean cutting board, and let it rest uncovered for 5 minutes, so the juices settle and the bacon stays crisp.
Serving
- Cut the chicken breasts into thick, diagonal slices, or leave them whole.
- Serve immediately with potatoes and a green salad.
