Why I love fried pickles in the air fryer
It’s the contrast that does it. Pickles are already crisp, sour and full of flavour, and when they get a hot shell of panko with smoked paprika, garlic powder and a pinch of cayenne pepper, something happens. The tang of the pickle, the spice of the coating and the creaminess of the dressing all hit at once. At the same time, I get to skip a pot of hot oil. Two tablespoons of rapeseed oil brushed onto the coating are enough to give colour and crunch.
A coating instead of batter
In a deep fryer, a thin batter sets the instant it hits the hot oil. In an air fryer there is only hot air, so the batter runs off the pickles and down through the basket before it has time to set. A dry coating in three layers solves the problem: the flour makes the egg stick, the egg holds on to the panko, and the oil on the surface makes sure the crumbs turn golden and crispy in the hot air.
My kitchen test of fried pickles
I tested the recipe in my Cosori Dual Blaze, which has one basket with heating elements both above and below. At 200 °C the slices got 4 minutes on each side, so 8 minutes per batch, and with two batches the cooking comes to 16 minutes. Even though the heat comes from both sides, I still turn the slices halfway through, because the other side also needs to be brushed with oil if the coating is to turn evenly golden all the way around.
The most important lesson from the test was how much patting the slices dry matters. When I only patted the slices lightly, the coating came off in flakes, but when I patted them completely dry on both sides, the crumbs stayed put. In a large model like the Philips XXL, more slices fit at a time, and if there is room for all of them in a single layer, you can make do with one batch. In a small air fryer, you divide them into three batches.
Dab the oil on with the brush instead of wiping it across. That way the panko stays in place, and the whole surface gets the oil it needs to turn golden.

The typical mistakes and how to avoid them
The most common mistake is wet pickles. Moisture between the pickle and the flour makes the coating slip off, so take the time to pat each slice dry on both sides. The next is overfilling the basket. If the slices lie on top of each other, the hot air can’t reach them, and the coating turns soft instead of crispy. Lay them in a single layer without overlap, and rather do one more batch. The third mistake is walking away from the air fryer in the final minutes. Panko goes quickly from golden to dark, so keep an eye on the colour towards the end, and take the slices out as soon as the coating is golden and crispy.
How to serve fried pickles
Fried pickles should go on the table straight away, while the coating is still crunchy. Here are my favourite ways to serve them:
- With the cold ranch dressing from the recipe, with dill and chives
- As a snack or starter on a platter in the middle of the table
- As a side with burgers and pulled pork
- With chilli mayonnaise or a cold yoghurt dip instead of the ranch dressing
- With a little chilli sauce stirred into the dressing, if you want more heat
Storage and reheating
Fried pickles are best eaten on the same day, while the coating is completely crispy. Leftovers keep for 1-2 days in the fridge if covered. Reheat them in the air fryer at 180 °C for 3-5 minutes, until crispy again. They are not suitable for freezing, so only bread as many as you expect to eat. You can, however, stir the ranch dressing together first and leave it in the fridge while you make the pickles.

How to make it
Ranch dressing
- Stir 1 dl crème fraîche together with 2 tbsp mayonnaise and 2 tbsp buttermilk in a bowl until the dressing is smooth.
Preparation
- Spread the slices out on kitchen paper, and pat them completely dry on both sides. If the pickles are wet, the coating will fall off.
- Whisk 2 pcs eggs together in a second bowl, and pour 100 g panko breadcrumbs into a third.
- Dredge the pickle slices in the seasoned flour, dip them in the egg, and press them into the panko so they are coated on both sides. Place the coated slices on a plate.
Cooking in the air fryer
- Preheat the air fryer to 200 °C fan.
- Place half of the slices in the basket in a single layer without overlapping, and lightly brush the top with oil. You will use a total of 2 tbsp rapeseed oil for both sides and both batches.
- Cook the slices at 200 °C for 4 minutes.
- Turn the slices with tongs, lightly brush the other side with oil, and cook at 200 °C for 4 more minutes, until the coating is golden and crisp.
- Take the slices out, and repeat with the rest: 200 °C for 8 minutes in total, turned and brushed after 4 minutes.
Serving
- Serve the crispy fried pickles straight away with the cold ranch dressing.
Our notes for the recipe
Dry pickles are the most important thing: pat the slices thoroughly dry on both sides, because moisture between the pickle and the flour makes the coating slip off. Use one hand for the flour and panko and the other for the egg, so your fingers don’t get sticky. Dab the oil on with the brush rather than wiping it across, so the crumbs stay in place, and always lay the slices in a single layer so the hot air can reach all the way around.
