Why make galette in the air fryer?
When it comes to making galette, the air fryer offers a quick and efficient way to achieve the desired texture: a crisp crust and a soft, juicy inside.
What is galette, and where does it come from?
Galette is a French dish that can be described as a rustic tart or open pie. Originally, galette comes from the Brittany region of France, where it was traditionally made as a simple rural dish with a filling of fruit or vegetables. The original version of galette was baked over an open fire or in a traditional oven. Originally, galette was often sweet, filled with apples or berries and served as a dessert, but today there are countless variations, both sweet and savoury.
The perfect glass for galette with goat cheese and Parma ham
For a rustic and flavourful French galette with goat cheese and Parma ham, we recommend a glass of 2022 Emilio Moro Ribera del Duero. This exceptional Sauternes, with its notes of dark blackberries, toasted oak and citrus, creates an unforgettable contrast to the tanginess of the goat cheese and the salty umami of the Parma ham. The full-bodied and luscious wine lifts the whole meal and brings a little extra French elegance to the table.
What flavour character does the galette get from the ingredients in this recipe?
The galette recipe we’ve presented here combines different flavour profiles to create a harmonious and delicious experience. The goat cheese adds a creamy and slightly tangy flavour that’s perfectly balanced by the salty Parma ham. The tomatoes add freshness and juiciness, while the potatoes contribute a rich and mild sweetness. The sautéed onions provide a deep and aromatic flavour, and the herbs add a fresh and spicy note. The crisp puff pastry forms a perfect contrast to the rich filling and adds a delicious texture.
How do you get the galette tender and lovely and soft and creamy inside and crisp outside but not dry?
The key to achieving the perfect galette lies in the balance between cooking time and temperature. By preheating the air fryer to the right temperature and baking the galette for the correct time, you achieve the ideal texture. To ensure the galette becomes tender and soft inside, it’s important to use enough filling and to cut the ingredients into suitable sizes so they cook evenly. At the same time, the crisp crust contributes a pleasant contrast in texture, but it’s important not to overbake the galette, as this can result in a dry consistency. By following the recipe closely and keeping an eye on the cooking time, you can achieve the perfect balance between a tender, creamy inside and a crisp crust.
What other ingredients can you use in a galette?
Galette is incredibly versatile and can be adapted to taste and season. In addition to the ingredients mentioned in this recipe, you can experiment with a wide range of fillings. Fresh vegetables such as courgette, spinach, mushrooms and onions can all be used to add flavour and texture. You can also add different kinds of cheese for an extra creamy consistency, or try different types of meat such as chicken, bacon or ham for a more protein-rich dish. Here only your imagination sets the limits, so be creative and play with different flavour combinations!
Try adding a pinch of Dijon mustard to the filling. The Dijon mustard adds an extra layer of complexity and brings a subtle sharpness

A light green salad with a simple vinaigrette dressing can work as a fresh and tasty side that goes well with the rich flavour of galette. You can also serve it with a slice of fresh bread or a piece of baguette to soak up the juices from the filling.
