How to make it
Tart base:
- Mix 125 g wheat flour and 1/2 tsp salt in a bowl.
- Add 75 g butter in cubes and rub it into the flour with your fingers until it resembles coarse sand.
- Gradually add 50 g cold water while quickly kneading the dough together.
- Shape the dough into a ball, wrap it in cling film and chill it for 30 minutes.
Filling:
- Heat 1 tbsp olive oil in a saucepan over medium heat.
- Sauté the chopped 1 pcs onion and 2 clove garlic with 1 pinch sugar for about 5 minutes, until soft.
- Add 200 g fresh spinach and let it wilt.
- Season with 1/2 tsp salt and 1/4 tsp freshly ground black pepper.
- Let the spinach drain in a sieve.
Assembling the tart:
- Preheat the air fryer to 180°C a few minutes before cooking.
- Roll out the dough on a floured surface into a circle about 3 cm larger in diameter than the tart tin.
- Place the dough in the tart tin and press it firmly into the edges.
- Prick the base with a fork.

- Spread the spinach filling over the pre-baked base.
- Place 200 g salmon fillets on top.
- Whisk 100 g crème fraîche and 2 pcs eggs together and pour it over the tart.
- Sprinkle with 50 g grated cheese.

- Let the tart cool for about 10 minutes before serving.
