Chicken Kiev is the dish where everything comes down to one moment: the knife cuts through the crispy coating, and the warm herb butter with garlic and dill flows out over the plate. The dish is named after the capital of Ukraine and is traditionally deep-fried, but in the air fryer the crust turns golden and crunchy with only a thin layer of oil brushed on.

The secret is in the preparation. The chicken breast is pounded thin, rolled tightly around a log of frozen herb butter and given a double coating of flour, egg and breadcrumbs before it is chilled. It sounds fiddly, but every step has the same purpose: to keep the butter inside the meat until you cut it open yourself. Here you get my method and the mistakes you need to avoid.

Why I love Chicken Kiev in the air fryer

Chicken Kiev feels like restaurant food, even though it is made from perfectly ordinary ingredients like chicken breast, butter, garlic, dill and breadcrumbs. It is the contrast that makes the dish special. On the outside a crispy crust, on the inside tender meat, and a molten core that works as the dish’s own sauce. When the herb butter runs out over a spoonful of mashed potatoes, nothing is missing from the plate.

In the air fryer you skip the pot of hot oil, the smell in the kitchen and the cleaning up afterwards. The hot air hits the rolls from all sides, so the coating turns golden without sitting in fat.

The difference between the air fryer and deep-frying

In a deep fryer the oil surrounds the whole roll, so the coating seals immediately. In the air fryer it happens more slowly, which is why the roll has to be tightly closed from the start. The double coating makes a thicker crust, and the time in the fridge lets it set while the butter stays cold. Brushing with rapeseed oil makes the breadcrumbs brown evenly instead of drying out. In return you get a dish with far less fat.

My kitchen test of Chicken Kiev

I have tested Chicken Kiev in my Cosori Dual Blaze, where heating elements both above and below the basket help the coating turn crispy on both sides. I preheat to 180 °C, brush the rolls with oil and give them 10 minutes on each side with one careful turn. After the 20 minutes the coating was golden, and the meat thermometer showed 75 °C in the meat, which is the core temperature the chicken needs to reach. Insert the thermometer from the end, so you measure in the meat and not in the butter core. If the temperature is a little low, give the rolls 2-3 more minutes.

Allow around 110 minutes from start to serving, but only about 30 of them are active work. The butter logs need 30 minutes in the freezer, and the breaded rolls need 30 minutes in the fridge, before they get 20 minutes in the air fryer. If you have a smaller air fryer, cook the rolls in two batches, so they lie in a single layer with air between them.

Freeze the herb butter completely solid before you roll it up. Cold butter is not enough. It has to be frozen, otherwise it melts out before the chicken is done.

Common mistakes and how to avoid them

The most common mistake is that the butter runs out into the basket. It usually happens because the butter was not frozen completely solid, or because the meat does not close tightly around it. First fold the short ends in over the butter log, then roll tightly, so there are no holes or open ends. The next mistake is pounding too hard or too unevenly. The meat should be about half a centimetre thick all over, and steady strokes between two pieces of plastic wrap stop you from tearing holes in it. The third mistake is skipping the chilling time. The 30 minutes in the fridge let the coating set and keep the butter cold, so the breadcrumbs stay on when you turn the rolls. Always place them seam side down, and turn them only once.

How to serve Chicken Kiev

Chicken Kiev needs something to soak up the herb butter and something fresh to cut through the richness. Here are my go-to choices:

  • Mashed potatoes, for the butter to flow out over when you cut into the meat
  • Green peas, which add sweetness and colour
  • A fresh green salad with a tangy dressing
  • A lemon wedge to squeeze over the coating

Storage and reheating

Store leftovers covered in the fridge for up to 3-4 days. Reheat them in the air fryer at 170 °C for 8-10 minutes, until the meat is heated through and the coating is crispy again. The microwave makes the breadcrumbs soft, so I skip it. The dish can also be frozen for up to 3 months. Thaw it in the fridge overnight before you reheat it.

Chicken Kiev takes a little patience, but the reward comes the second you cut it open and see the butter flow. Follow the steps, give the rolls their chilling time and let the air fryer do the rest. Have fun in the kitchen.

How to make it

Herb butter

  • Mix 100 g butter with 2 clove garlic, 2 tbsp dill and 1 tsp lemon juice in a small bowl until the herb butter is evenly combined. The butter should be soft, the garlic pressed and the dill finely chopped.
  • Divide the herb butter into 4 equal portions, and shape each portion into a log about 6 cm long on a piece of plastic wrap. Wrap up the logs and put them in the freezer for 30 minutes, until completely firm.

Preparation

  • Slice 4 pcs chicken breasts open lengthways from the thick side without cutting all the way through, and open each breast out like a book.
  • Place the meat between two pieces of plastic wrap and pound it out with a meat mallet to an even thickness of about 0.5 cm. Pound with steady strokes so you do not tear holes in the meat.
  • Season the meat on the inside with 1 tsp salt and 0.5 tsp black pepper.
  • Place a frozen butter log in the middle of each piece of meat. First fold the short ends in over the butter, then roll the meat up tightly so the butter is completely enclosed with no openings.
  • Beat 3 pcs eggs together in a deep plate, and put 1 dl plain flour and 150 g breadcrumbs each in its own deep plate.
  • Coat each roll first in the flour, then in the egg and finally in the breadcrumbs. Press the breadcrumbs on firmly, especially at the ends and along the seam.
  • Repeat with the egg and breadcrumbs, so the rolls get a double coating that holds in the butter.
  • Place the rolls on a plate with the seam side down, and put them in the fridge for 30 minutes so the coating sets and the butter stays cold.

Cooking in the air fryer

  • Preheat the air fryer to 180 °C fan.
  • Brush the rolls all over with 2 tbsp rapeseed oil.
  • Place the rolls in the basket in a single layer, seam side down and with a little space between them, and cook them at 180 °C for 10 minutes.
  • Carefully turn the rolls with tongs without squeezing them, and cook them for another 10 minutes at 180 °C, until the coating is golden and crispy.
  • Check with a meat thermometer that the meat has a core temperature of 75 °C. Insert the thermometer into the meat from the end so you do not hit the butter core, and give the rolls 2-3 more minutes at 180 °C if the temperature has not been reached.

Serving

  • Let the chicken rest for 3 minutes, and serve it with mashed potatoes, so the melted herb butter flows out over the mash when you cut into the meat.

Pound the meat evenly thin, so it is easy to roll and cooks through by the time the coating turns golden. Place the rolls seam side down with some air between them, and turn them only once so the coating stays intact.
