Why I love cowboy pie in the airfryer
Cowboy pie is a dish where the whole experience depends on the topping. Beans and sausages taste good no matter what, but it’s the brown, crispy cheese crust over the mashed potatoes that makes the dish something special. The airfryer sits close to the food and blows hot air directly over the surface, and that’s exactly why the top gratinates faster and more evenly than I experience in a regular oven.
Then there’s the practical side. I don’t have to heat up a large oven for a single dish, and because the dish is built in layers in the very dish it’s served in, I’m only left with one pot for the potatoes and one pan for the sausages afterwards. It’s exactly the kind of weeknight dinner I make on an ordinary day.
The difference between airfryer and oven
In an oven, the air has to heat up the whole space before it even reaches the food. In the airfryer, the hot air circulates in a small chamber just a few centimetres from the cheese, and that means two things: the top browns faster, and the temperature has to be kept in check as a result. 180°C sounds low for gratinating, but it’s deliberate – at higher heat the cheddar turns dark long before the bean layer at the bottom is heated through.
My kitchen test of cowboy pie
I’ve made cowboy pie several times in my Philips XXL, which has enough basket space for a proper ovenproof dish, and 180°C for 20 minutes is the point where the cheese is golden-brown and the bean layer bubbles up along the edge. The prep – potatoes boiled, mash stirred, sausages browned and the beans heated through – takes me around 25 minutes, so the whole dish lands at 45 minutes from when I take out the potatoes to when the dish is on the table.
If you have a Cosori Dual Blaze or another model with two baskets, you can split the dish between two smaller dishes and run them at the same time – the time and temperature stay the same. Compared with my oven, where the same dish needs noticeably longer including preheating, the airfryer is the fastest route to a finished cowboy pie.
Mix the mashed potatoes a touch firmer than you’d serve them as a side. A firm mash stays put like a lid over the beans and browns on top, while a loose mash sinks into the sauce and disappears.

The common mistakes and how to avoid them
The mistake I see most often is a mashed potato that’s too loose. If it’s mixed with too much milk, it sinks down between the beans, and instead of three distinct layers you get a uniform casserole with cheese on top – go easy on the liquid, and let the mash cool for a moment before spreading it. The next classic mistake is an overfilled dish, since the bean sauce bubbles up along the edge as it cooks; fill the dish no more than two-thirds full, or you’ll end up with burnt sauce at the bottom of the basket. And then there’s the temptation to turn up the heat to get the cheese golden faster. That ends in bitter, dark cheddar long before the middle is hot – stick to 180°C and let time do the work.
How to serve cowboy pie
The dish is filling on its own, so the sides should ideally add acidity and freshness rather than more bulk:
- A crisp green salad with a tangy vinaigrette
- Pickled red onions or quick-pickled cucumbers
- A few slices of toasted bread to mop up the sauce
- A dollop of crème fraîche or cold yoghurt on the side
- Freshly chopped parsley or chives sprinkled on top
Storage and reheating
Leftovers keep for a couple of days in the fridge in an airtight container or with cling film over the dish. Reheat them in the airfryer at the same 180°C until the cheese bubbles again and the middle is heated through – the microwave makes the mash watery and the cheese rubbery. Cowboy pie can also be frozen in portions, but expect the mashed potatoes to turn a little grainier after thawing. The flavour, on the other hand, doesn’t suffer at all.

How to make it
Preparation
- Peel 800 g potatoes and cut into rough 3 cm cubes. Boil until tender in lightly salted water for 15-18 minutes.
- Slice 400 g sausages into rounds about 1 cm thick, and finely chop 1 pcs onion and 2 clove garlic.
- Coarsely grate 150 g cheddar so the cheese is ready for the topping.
Cooking in the Air Fryer
- Preheat the air fryer to 180 °C.
- Toss the sausage slices, onion and garlic with 1 tbsp olive oil in an oven-proof dish that fits in the basket. Sauté in the air fryer at 180 °C for 6 minutes, stirring halfway through.
- Spread the mashed potato over the filling in an even layer, and drag a fork through the surface to create ridges.
- Sprinkle the grated cheddar evenly over the mash, so the whole surface is covered.
- Bake in the air fryer at 180 °C for 14 minutes, until the cheese has melted and turned golden, and the filling is bubbling at the edges.
Serving
- Let the dish rest for 5 minutes to let the layers settle. Sprinkle with 1 tbsp chives and serve straight from the dish.
